Hummus Avocado Collard Green Wraps
For a quick and easy meal, wraps are a great option. Plus, they can be super nutritious as well. One way to upgrade the health factor is to use a collard green instead of a flour tortilla. These greens are gluten-free, loaded with vitamins and minerals and sturdy enough to hold your veggies, etc.
Ingredients:
2 large collard greens
1/2 cup hummus (I recommend Hope hummus.)
1/2 avocado, seeded and sliced
1/2 cucumber, sliced
Instructions:
Cut the stem off of each leaf at the base of the collard. Take a small knife and trim the spine of the collard down the middle of the leaf. The spine should be flat with the rest of the collard. Spread hummus onto collards and then add the avocado and cucumber slices. Fold the bottom and top of the leaf over the filling. Fold the top and bottom of the leaf toward the center. Fold the side closer to the filling and start rolling from that side until you reach the other end.
